Residence Peach Passoa
This seasonal, refreshing cocktail has been designed exclusively for the Club by our resident mixologists. Combining Sagatiba Cachaca, St Germain Elderflower liqueur, Gabriel Boudier crême de peach, muddled fresh peach and served over crushed ice, the Peach Passoa is a refreshing taste of summer. Enjoy!

Cocktails €13.50orn in Dublin City, Residence Head Chef Graham Neville attributes his particular culinary style to his passion for locally sourced, Irish ingredients and his classical French training. Beginning his culinary career at a very young age, and training in various Dublin restaurants during his secondary education, Neville had an intimate understanding of the intricacies of running a highly organised kitchen before advancing his culinary career. Following his professional training in the Culinary Arts at DIT Cathal Brugha Street, Neville spent a number of years working in the United States, primarily in Chicago where he designed progressive French cuisine at both Tru and Les Nomades, two of the city’s finest restaurants, both valuing an artistic and free-thinking approach to food. On his return to Ireland he worked for seven years at Thornton’s restaurant, under Kevin Thornton, the only Irish chef to have been awarded two Michelin stars. Neville sites both his extensive travels and his experience at Thornton’s as having been formative in what he values in foWhere possible I always use locally sourced, Irish ingredients, but I’m interested in new ways of combining these ingredients, and in new ways of handling traditional combinations of tastes. I want to create an environment which is warm and inviting, where my food can create dialogue and discussion.” – Head Chef Graham Nevill
- Mai Tai
- Mai Tai, translated from Tahitian, means "Out of this World." A fitting description for this legendary cocktail. The Mai Tai was invented in 1944 in Oakland's infamous bar, Trader Vic's. There Victor Bergron, one of the founders of this tiki bar, put together this classic drink. Here at Residence our take on the Original Trader Vic Formula is made with a delicate blend of J. Wray & Nephew White Rum balanced with the beautiful Appleton Estate Aged Rum—a contemporary twist on this canonical tiki cocktail. A perfect accompaniment to a summer evening.
- Batida Rosa
- Our interpretation of a classic style Brazilian drink, Cachaca is the national spirit of Brazil and is made from distilled sugar cane juice. Sagatiba Cachaca mixed with fresh pineapple, pineapple juice, pomegranate syrup and lime juice, topped with soda water and served on the rocks.
- Pear and Elderflower Foam
- A beautifully presented drink consisting of Grey Goose Le Poire, Poire Williams Liqueur and St Germaine Elderflower Liqueur stirred with fresh basil leaves. Fine Strained, then topped with Taittinger Brut Foam and served in a coupe style glass.
- Melon Fresh
- As the name suggests this cocktail is a fresh mix of Matusalem Classico Rum and pureed melon, complimented by the addition of Midori and Galliano Liqueurs.
- Pineapple Spice
- Captain Morgans Gold Spiced Rum and Gabriel Boudier Apricot Brandy are shaken with fresh chunks of pineapple and honey syrup. Finished with a crack of black pepper.
- Cucumber Collins
- Fresh muddled cucumber and lemon juice is used to bring out the natural flavours found in Hendricks Gin. Sweetened slightly by St Germaine Elderflower liqueur and topped with soda water. A beautifully crisp cocktail with a refreshing bite.
- Apricot Chillitini
- A half a dried Chilli and Apricot Jam are muddled together and added to Absolut Vodka and Gabriel Boudier Apricot Brandy. Fruity with an added kick.
- Residence Summer Fruits Cup
- A blend of Jameson 12yr whiskey and Archers Peach Schnapps topped with Ginger Ale, served tall over ice and lots of fresh summer fruit.
- Saffron Martini
- If you like Gin Martinis then try this slightly sweeter version, Gabriel Boudier Saffron Gin and St Germaine Elderflower Liqueur garnished with a cucumber peel.
- White Chocolate Martini
- A perfect after dinner drink. Absolut Vannila, Mozart white chocolate liqueur and Coole Swan Irish Cream Liqueur finished with our homemade White Chocolate Sauce. Sheer Indulgence
- Heavens Scent
- A fragrant mix of Sour Cherry and Vanilla Flavours. We infuse Matusalem Platino rum with Madagascar Vanilla pods and combine it with Luxardo Maraschino liqueur and sour cherry puree with a hint of vanilla gomme syrup.
- Residence A.M
- A refreshing pallet cleanser or morning after pick-me-up. Macerated fresh orange chunks and Orange Marmalade combined with Tanqueray Gin and Gran Marinier Liqueur.
- Jameson 41
- Named after the building that surrounds you. Jameson 12yr old whiskey with fresh lemon and cloudy apple juices. Topped with a floated layer of Goslings Black Seal Rum.
- French Martini
- An easily drinkable cocktail. Absolute Vodka and Chambord shaken with fresh Pineapple juice. The new Cosmo’, it’s set to be a favourite with the ladies
- Tobacco Old Fashioned
- A heavy mix of Tobacco infused Havana Club 7yr old Rum, Gomme Syrup and Aromatic Bitters. Intended to be enjoyed like a fine cigar, Slowly.
- Just Richard... ‘A Life Well Lived’
- An Armagnac based cocktail stirred with Benedictine, Maple Syrup, Cinnamon Quills and Orange bitters to enhance the flavours of the spirit. Diluted to perfection and served on the rocks.
- Mango Mint Magarita
- A summer inspired cocktail that tastes of long evenings and summer holidays. Patron Silver Tequila shaken with mango puree and fresh mint leaves.
